    Recipe Introduction


    Tiramisu in Italian means "Lift me up" and this version of the traditional Venetian dessert is a dream. Ladyfingers, dipped in rum and espresso, are layered with sweet marscapone egg cream and topped with chocolate.


    List of Ingredients




    2 cups espresso coffee
    1 cup rum
    7 separated eggs
    ½ cup sugar
    Pinch salt
    32 oz. mascarpone cheese
    2 or 3 packages ladyfinger biscuits
    Cocoa powder

    Recipe



    In a medium sized bowl mix espresso with rum. Set aside. Separate the eggss. In a small mixing bowl, beat egg yolks and sugar until thick and fluffy. Use electric or hand mixer, set aside. In a large clean and dry mixing bowl beat the egg whites and salt until whites are airy and creamy. they will thicken but do not let them get stiff peaks like a meringue. Add the yellow mixture to the white mixture. Add the mascarpone cheese. Mix well.

    Prepare the tiramisu in a 9" x 11" baking pan that is at least 2" high.

    Dip ladyfinger biscuits lightly in the coffee/rum mixture. Place them tightly side by side in the pan. Layer cream mixture on top of ladyfingers, same height. Sprinkle with cocoa. Repeat process once (ladyfingers, cream, cocoa). Chill for 4 to 5 hours before serving.

    This recipe makes a large cake serving 12 people. Cut recipe in half to make a smaller cake.
