    2, 3 oz. beef tournedos
    3 beefsteak tomatoes (slices)
    3 fresh mozzarella (slices)
    2 fettuccine (fried)
    1 oz. olive oil
    1 oz. basil oil
    1 Tbsp. balsamic reduction
    4 oz. risotto
    1 oz. spinach
    2 oz. chicken stock
    1 Tbsp. Mascarpone cheese
    1 Tbsp. parmesan cheese
    1 tsp. salt
    1 tsp. w. pepper

    Recipe



    Season beef with salt and pepper. Sear beef on both sides until medium rare.
    Place tomatoes and mozzarella on a pizza pan and season with salt. Put in oven to melt mozzarella. Cook at 400 F for 5 minutes.
    At the same time, place the chicken stock in a sauté pan with the risotto and spinach. When the stock starts to cook out, add mascarpone cheese, parmesan cheese, salt and pepper.
    Place the risotto in a ring mold on the plate. Stack the tomatoes and beef every other stack, stab the top with your fried fettuccine. Garnish with balsamic and basil oil.
