    2 tbsp butter or margarine 30 mL
    1 onion, chopped 1
    3 cups peeled, coarsely shredded carrots 750 mL
    1/4 tsp turmeric (if you have it) 1 mL
    4 cups chicken broth (home made or canned) 1 L
    1/2 tsp Italian seasoning (or dried oregano, thyme, basil, or dill) 2 mL
    1 cup corn kernels (fresh, frozen, or canned) 250 mL
    salt and pepper to taste

    Melt the butter or margarine in a large saucepan and sauté the chopped onions over medium heat until softened - about 5 minutes. Add the shredded carrots and the turmeric. Cook, stirring, until wilted.

    Add the chicken broth and Italian seasoning, bring to a boil, and let simmer for 10 minutes. Add the corn and cook for another 5 minutes or so.

    Taste and adjust the seasoning with salt and pepper, if necessary.

    Tip: The turmeric gives the soup a super-bright yellow colour, but if you don't have any, just leave it out.

    Serves 4.
