    4, 12 oz. Berkshire Pork Strube Ranch (pork chops)
    1 c. cherry peppers (split)
    ¼ c. red onions (julienned)
    1 tbsp. garlic chips
    2 oz. red wine vinegar
    2 oz. virgin olive oil (light)
    Kosher salt (to taste)
    Ground black pepper (to taste)
    1 pinch hot pepper seed
    1 tsp. fresh oregano leaves
    2 oz. white wine (dry)

    Recipe



    Salt and pepper the Berkshire pork chops (on the stove top heat your pan to "high.")
    Add the chops to the pan and sear both sides.
    Then put the pan and chops in a preheated 350-degree oven and bake to a 145-degree (medium) temperature.
    Take the pan out of the oven and return it to the stove top.
    Drain the excess oil from the chops and add the light olive oil, garlic chips and onions, and saute.
    When the pork chop is at 154 degrees, remove from the stove top.
    Add the cherry peppers and deglaze with white wine.
    Add the red wine vinegar, seasoning and fresh oregano leaves.
    Dash with hot pepper seed to taste.
    Finish with the virgin olive oil.
    Plate the chop and top with sauce.
