    Blackberry Marinated Bison Tenderloin

    List of Ingredients




    1 BISON CHATEAUBRIAND
    ½ CUP CRUSHED FROZEN OR FRESH BLACKBERRIES
    1 TBSP VEGETABLE OIL
    For the grits

    ½ cup white corn meal
    2 cups chicken stock
    3 tbsp grated cheddar
    salt and pepper to taste
    1 sprig of thyme
    For the tomato braised fennel

    1 fennel cut into quarters
    5 ripe tomatoes cut in half
    ½ cup chicken stock
    salt and pepper to taste

    Recipe



    For the bison

    In a bowl mash blackberries and oil together. Add bison and coat it generously. Let marinate for 3-4 hours in the fridge.
    After bison has marinated have grill heated to medium. Season bison with salt and pepper then grill 3-4 minutes aside for medium rare.
    Let bison rest 3 minutes then carve into thin strips.
    For the grits

    In saucepan bring chicken stock to boil then add corn meal.
    Stir constantly until grits become thick and creamy.
    Finish grits with cheese (still stirring), salt, pepper and thyme.
    For the tomato braised fennel

    Place ingredients in roasting pan and cover with foil.
    Place in 350 degree oven for 20 minutes then serve.
