    1 teaspoon kosher salt

    1 teaspoon black pepper

    1 bunch scallions, trimmed and coarsely chopped

    1 ounce soy sauce

    1 habanero chili, seeded and coarsely chopped

    1 ounce extra virgin olive oil

    1 ounce Dijon mustard

    1/2 ounce fresh ginger, peeled and sliced thinly

    1 3-pound boneless pork loin, split lengthwise

    Recipe



    In a small blender, combine salt, pepper, scallions, soy sauce, habanero chili, olive oil, mustard and ginger. Puree all ingredients into a smooth paste. Place pork loin in a shallow pan; cover and marinate with spice mixture for 24 hours, turning the meat occasionally.

    For preparation, place the loin 8 to 10 inches above medium coals. Grill for 25 to 30 minutes, turning frequently.

    Yield: 8 to 10 servings.
