    FILET MIGNON "GARLIC SUN"

    List of Ingredients




    6 ea 7oz. Filet mignons
    24 pieces. Whole peeled garlic
    2 tbls virgin. Olive oil
    1 tbls chop shallots
    2 med. Sprigs rosemary chopped
    12 oz demi glace or brown gravy
    3 oz merlot wine
    10 ea. Crushed black. Pep. Corns
    Salt to taste
    6 oz Italian Gorgonzola

    Recipe



    1 Pre heat oven to 275 and roast garlic in half the oil. (About 1hour)
    2. Make an incision in each filet, put one piece of garlic in the middle. Brush with olive oil, season and grill to preference.
    3. Make sauce, sauté the rest of the garlic, peppercorns, shallots and rosemary, add merlot, reduce by half, and add demi. Boil about 5-10 min.
    4. Place 1 oz of cheese on top and melt in broiler. Pour about 2 oz of sauce over filet, with 2 cloves of garlic.
    Serve with your favorite vegetables and potato.
    Suggested wine French Bordeaux or California merlot
