Hedley’s Meat Loaf

List of Ingredients




1 cup Panko or soft bread crumbs
½ cup dry red or white wine
3 eggs, slightly beaten
1 26-oz. jar marinara sauce
½ cup finely chopped onion
1 clove garlic, minced
2 tsp. dried Italian seasoning
1 tsp. smoked or plain paprika
2½ lb. lean ground beef

Recipe



In a large bowl combine bread crumbs and wine. Let stand 5 minutes. Add eggs, 1 cup of the marinara, onion, garlic, Italian seasoning, 1½ teaspoons salt, paprika, and 1 teaspoon pepper. Add ground beef; mix well. Firmly press mixture into a 9x5x3-inch pan.
Bake in a 350° oven 1¼ to 1½ hours, until internal temperature is 160°. Spoon off fat. Let stand 10 minutes. Heat reserved sauce; serve with meat loaf. Makes 8 servings.
