    Two Fat Ladies Ride Again

    List of Ingredients




    1 lb pork back fat, skin removed
    1 lb belly of pork
    4 garlic cloves, peeled
    wine glass of dry sherry
    2 bay leaves
    2 tbsp paprika
    1-2 tsp freshly grated nutmeg
    salt and freshly ground pepper

    Recipe



    Cut the fat into the smallest possible cubes, and cut the belly into srips following the grain of the meat. Put the fat and belly pork into a caserole with the garlic cloves, sherry, bay leaves, paprika, nutmeg, salt and pepper. Cook in a preheated oven at 275 for 6 hours, stirring occasionally.

    Turn into a colander set over a bowl. Press down on the meat with the back of a spoon to drain it well. Pick the meat into shreds with a fork, then add to the fat in the bowl and stir to mix. Taste for seasoning. Keep in the refrigerator until needed.
