    Marinated Quail Murphy Style

    List of Ingredients




    1/2 cup minced shallots
    1 tbl minced ginger
    2 tbl brown sugar
    1 tbl minced garlic
    1 tbl cracked black peppercorns
    2 tbl 5-spice powder
    1/2 cup rice vinegar
    1 cup soy sauce
    4 quail
    olive oil

    Recipe



    Combine shallots, ginger, sugar, garlic, peppercorns, 5-spice powder, vinegar, soy sauce and one cup of water in a medium sauce pan and bring to a boil, stir and then cool.

    Cut along each side of breast bone of each bird, then straight down through the meat. Set aside.

    Strain and cool the marinade for at least three hours and no more than 24.

    When you're ready to cook, drain the quail. Place 2 tablespoons of oil in a large skillet and turn to high. Saute the quail skin side down, until a nice golden brown-about 4 minutes. Turn over and repeat for 2 minutes.
