    Mary Had a Little Lamb Chops

    3 tablespoons olive oil


    Salt


    Pepper to taste


    Garlic powder to taste


    4 to 6 lamb chops, 1 inch thick (loin or sirloin)


    1/4 cup honey


    1/4 cup prepared mustard

    Recipe



    Preheat broiler. In a small bowl, combine olive oil and seasonings. Brush each lamb chop with oil mixture and make slits in fat to help prevent curling. In a small saucepan, over medium heat, combine honey and mustard; heat until warm. Place chops on rack in broiler pan. Place pan under broiler, so that chops are 3 inches from heat. Broil until slightly brown; brush with sauce. Finish browning first side; turn. Repeat for second side. (Cook about 7 minutes per side.) Pour leftover sauce over chops.


    Yield
    4 to 6 servings
