    List of Ingredients




    6 to 7 oz. veal scallopini
    4 oz. olive oil
    flour to dredge
    egg wash
    Italian bread crumbs
    4 oz. buffalo mozzarella cheese
    1 tblsp. julienne basil
    1 each tomato
    1 oz. balsamic vinegar
    2 oz. olive oil

    Recipe



    In hot saute pan add olive oil, place veal into flour, egg and breadcrumbs. Place veal in saute pan and cook to golden brown on both sides.

    Dice tomato and cheese. Add vinegar and oil and basil mix well and place tomato mixture on top of veal.
