    4 strips Bacon
    ½ white or yellow Onion
    1 Bell Pepper
    4 slices American Cheese
    1 Boneless Round Roast
    Cotton String
    Toothpics

    Fry the bacon and crumble it. Save the bacon grease.
    Slice the onion half and bell pepper into bite size pieces. Fry the pepper and onion in the bacon grease until tender.
    Preheat oven to 350 degrees.
    With a sharp knife cut the roast lengthwise as though you were going to cut it in half, but do not cut all the way through.
    Turn the roast over and make two more cuts, splitting each “half” from the first cut, again not cutting all the way through.
    Unfold the roast, like an accordion, and lay it out flat. Pound it out well with a meat mallet.
    Spread the bacon, pepper and onion on the roast. Place the cheese slices on top
    Roll the roast with the filling inside and tie with cotton string. Pin the ends shut with toothpics.
    Put roast in a baking dish and place in oven. Cook for 35 minutes for each pound of the roast, or to temperature. If cooking to temperature, be sure your probe is in the meat and not the filling.

    If you want a result that is more nearly authentic, leave out the bacon. Bacon is a convenient way to produce oil for cooking the pepper and onion and I like bacon.

    Use leftovers to make sandwiches on Hoagie rolls.
