    4 filet mignons (approx. 6 oz. each)
    2 tablespoons butter
    2 tablespoons minced shallots
    1 cup sliced mushrooms
    1/2 cup Marsala wine
    1/2 cup Balsamic vinegar
    1/4 cup thinly sliced green onion
    1 tablespoon cold butter

    Recipe



    01. Trim the filets of excess fat and season on both sides with salt and coarsely ground black pepper.

    02. In a sauté pan, melt 2 tablespoons of butter over medium heat. Add the shallots and heat for 30 seconds.

    03. Add the filets and cook for approximately 4 minutes on each side, or until your desired level of doneness. Remove filets from the pan and hold in a warm oven.

    04. Add the sliced mushrooms to the pan and sauté for approximately 1 minute.

    05. Deglaze the pan with the Marsala wine. After approximately 30 seconds, add the Balsamic vinegar and heat until the liquid reduces by half.

    06. Turn off the heat and add the green onion slices. Whip in 1 tablespoon of cold butter.

    07. Place the filets on warm dinner plates and top each filet with some Marsala wine sauce. ENJOY!

    Serves 4.
