    List of Ingredients




    1 pound boneless, skinless chicken breast, cut into 1-inch cubes
    1 egg, lightly beaten with a fork
    3 tablespoons cornstarch
    Water, as needed (about 1/4 to 1/3 cup)
    Olive oil
    1/4 bottle Asiatique stir-fry sauce (see note)
    2 tablespoons sugar
    1 tablespoon vinegar
    Hot chili sauce, to taste

    n a bowl, coat chicken pieces evenly with egg. While mixing, add the cornstarch and enough water so that the chicken becomes coated with a thin paste; set aside.

    Heat a few inches of oil in a deep pot until the oil begins to shimmer and pops when a drop of water is added. Cook chicken in oil, a few pieces at a time. When chicken is golden brown, remove to a plate and keep warm.

    Heat a sauté pan over medium-high heat. Add stir-fry sauce. When sauce bubbles, add sugar, vinegar and hot sauce to taste. Simmer sauce another 30 seconds. Add chicken pieces to sauce and toss together, cooking just enough to warm through.

    Serve immediately with rice.

    Serves 2.
