    Big Merle's Fried Chicken

    1 fryer, cut up
    1 cup buttermilk
    1 cup flour
    1 1/2 teaspoons salt
    1/2 teaspoon pepper
    1/2 teaspoon poultry seasoning
    cooking oil (for frying)

    Recipe



    1. Put chicken pieces in shallow bowl; cover with buttermilk.
    2. Chill for 1-2 hours.
    3. Mix dry ingredients.
    4. Drain chicken; toss with dry mixture.
    5. Place on wax paper for 20 minutes.
    6. Heat 1/4 inch oil in large skillet.
    7. Fry chicken until browned on all sides.
    8. Cover and simmer, turning occasionally, for 40 minutes.
    9. Uncover and cook 5 more minutes.

    Great with mashed potatos and gravy
