    2 T. olive oil
    4 chicken thighs, skinless
    5 cloves garlic, chopped
    1/2 C. fresh sage, chopped
    salt and pepper
    1/2 C. balsamic vinegar

    Recipe



    Heat the oil in a heavy duty pan that can be covered. Add the chicken thighs, the garlic and the sage. Brown the chicken over a medium high flame on both sides. Season with the salt and pepper. Add the vinegar, cover the pan, lower to a simmer and cook for 10 minutes. Turn the chicken over, cover the pan again and cook an additional 10 minutes. Serve the chicken on a grain, spooning some of the pan juices and bits of sage and garlic over the grain as well.

    HINTS:
    You could use skinless chicken breasts. The cooking time may need to be 5 minutes longer on each side after introducing the vinegar. If you don't have access to fresh sage, try this recipe with fresh parsley.

    Serves 2.
