    2 8oz chicken breasts

    Seasoned flour

    1 oz clarified butter

    1 oz chopped shallots

    3 oz chicken stock

    1/4 c currant jelly

    1/2 oz 151 proof rum

    1/2 c strawberries quartered

    2 t chopped mint

    1 sprig mint for garnish

    Recipe



    Pound the chicken breasts lightly. Dredge in seasoned flour (salt, pepper and garlic). Brown the chicken on both sides and transfer to an oven proof dish and finish cooking in the oven. Add the shallots to the pan and sauté for 30 seconds. Deglaze the pan with the chicken stock. Add the currant jelly and the strawberries and half the chopped mint. Reduce to a glaze. Add the rum and flame it off. Return the chicken to the pan and simmer for 2-3 minutes. This dish is wonderful with rice, where as the chicken is served on top of the rice and the sauce is absorbed into the rice.
