    # 1 lb diced cooked chicken
    # 1/4 cup cilantro, chopped
    # 3/4 cup onion, chopped
    # 1 cup carrots, frozen or fresh, sliced
    # 1 cup green pepper, chopped
    # 1 tsp chicken base
    # 1 tsp garlic, minced
    # 1/8 cup oil

    Recipe



    1. Saute all ingredients in oil until tender.

    2. Add chicken. Mix well. Heat to 165 degrees.

    Yields 8 servings


    Vegetable Rice

    INGREDIENTS:

    * 1 cup cilantro
    * 1 cup canned carrots
    * 1 cup onion
    * 2 tsp minced garlic
    * 1 cup water
    * 1/4 cup oil
    * 2 cups basmati or long grain rice
    * 2 tsp chicken base
    * 3 cups water
    * 1 tsp salt

    DIRECTIONS:

    1. Puree cilantro, carrots, onion, garlic and 1 cup water until smooth.

    2. Heat oil in kettle, add rice, salt and chicken base. Lightly brown.

    3. Add rice, pureed vegetables and 3 cups water.

    4. Cook mixture on medium heat for 10 minutes.

    5. Cover and transfer to 350-degree oven for 15 minutes or until water is absorbed.

    Yield 8 - 1 cup servings
