    Chicken in Beer with Tomatoes

    1/3 cup Flour
    1 tsp Salt
    ½ tsp black Pepper
    ½ tsp Paprika
    1 (3lb) Chicken, cut up
    1/3 cup Bacon drippings or vegetable Oil
    1 clove Garlic
    3/4 cup chopped Onion
    3/4 cup chopped Green pepper
    1 (35oz) can Italian peeled Tomatoes, drained and chopped
    1 (12oz) can Beer
    ½ (3oz) can Tomato paste
    ½ tsp dried Thyme
    ½ tsp dried Marjoram

    Recipe



    Combine flour, salt, pepper and paprkia in a plastic or paper bag. Add
    chicken pieces a few at a time and shake to coat.
    In a large frying pan, heat bacon drippings or oil over medium heat. Add
    chicken pieces and garlic clove. Cook turning until chicken is browned on
    all sides, about 10 minutes. Remove garlic and transfer chicken to a baking
    dish and cover to keep warm.
    Preheat oven to 350°F. In same frying pan, saute onions and peppers until
    tender, about 3 minutes. Sprinkle over chicken.
    In a large bowl combine tomatoes, beer, tomato paste, thyme and marjoram.
    Pour over chicken and bake for 1 hour, or until chicken is tender.
    *Serve with rice and a crisp salad.
