    FIVE BOY CHICKEN CURRY

    List of Ingredients




    1 cup chopped onion
    2 apples, pared and finely chopped
    2 cups diced celery
    1/4 cup olive oil, butter, or margarine
    2 tablespoons curry powder
    1/4 teaspoon ground black pepper
    1/2 teaspoon ground ginger
    1/2 teaspoon hot pepper sauce
    4 3/4 cups chicken broth, divided
    1/2 cup flour
    4 cups cooked chicken, cut into strips
    2 cups heavy cream
    3 egg yolks, slightly beaten
    Salt and ground black pepper to taste
    6 cups hot cooked rice

    Cook onion, apples and celery in oil until lightly browned. Stir in curry powder, pepper, ginger, pepper sauce and 4 cups broth; simmer 20 minutes.

    Blend flour with remaining 3/4 cup broth. Stir into hot mixture and cook until thickened, stirring constantly. Add chicken to sauce and refrigerate for 3 or more hours.

    When ready to serve add cream, egg yolks, salt and pepper. Heat thoroughly. Serve over fluffy rice.

    Serves 5.
