    1 (3 1/2 pound) roasting chicken

    3 tablespoons butter

    1 tablespoon fresh lemon juice

    1 teaspoon salt

    2 teaspoons Bell's poultry seasoning

    1 teaspoon freshly ground black pepper

    1 large onion

    Preheat the oven to 450 degrees. Remove the giblets from the chicken, and clean it thoroughly inside and out. Heat 2 tablespoons of the butter in a small saucepan, and mix it with the lemon juice and seasonings. Peel the onion, and roll it in the butter-and-seasoning mixture; place it in the chicken's cavity. Rub the remaining mixture on the chicken. Cut the remaining 1 tablespoon of butter into bits, gently lift the chicken skin with your fingers, and place the butter bits under the breast skin of the chicken.

    Place the chicken in the oven, and roast for 10 minutes. Then lower the heat to 400 degrees, and continue to roast for 1 hour longer. Serve hot. (The onion may be removed from the chicken and a slice served to each diner.)
