    Heaven's Delight Chicken

    1 whole EMPIRE chicken
    4 oz. ground EMPIRE turkey
    1 cup pine nuts
    2 cloves crushed garlic
    salt and pepper to taste
    oil to sauté pine nuts
    1 cup raisins
    1 cup raw rice
    5 cups water
    1 tablespoons salt

    Heat enough oil (about 3 tablespoons ) in a heavy skillet. When the oil is sizzling drop in the crushed garlic. Lower heat to medium, add the ground turkey and cook until the meat is no longer pink, breaking up clumps as it cooks. Add the pine nuts and sauté until the pine nuts turn a light brownish pink color. Transfer ingredients to a mid-size pot.

    AUNTIE RIVKA OBSERVATION:

    You can cook a small amount of food in a large pot but you cannot cook a large amount of food in a small pot. Besides, cooking in a large pot makes you look more productive! It impresses friends and relatives if they come into your kitchen and see a LARGE pot on the stove - even if it is just water boiling!

    In the pot add the boiling water, (put COLD water in the pot and bring it to a boil or boil the water first in a kettle. Oy, these questions!) salt, raisins, rice and the sautéed meat and nuts. Cook until all the water is absorbed. If the rice is still not completely cooked add a little more water and keep cooking. DO NOT overcook as you will end up with a mash. I speak from experience!     Wash the chicken with cold water inside and out. Pat dry with paper towels.

    Take the mixture out of the pot a spoonful at a time and stuff the cavity of the chicken.

    Of course you have too much. But you will put this in a greased side dish and bake in the oven alongside the chicken.

    Close the cavity. With a skewer! (Oy, we are back in cooking class 100) Tie the legs together with a piece of string. The legs of the chicken...

    Place the chicken in a roasting pan . Yes, the skewered side is up. Bake at 375 for about one hour-- depending on the size of the chicken--usually about 25 minutes per lb. in a conventional oven.
