    Helmers' Black Forest Chicken

    List of Ingredients




    2 chicken cutlets, pounded thin
    1/2 cup onions (cut into 1/2 inch pieces)
    1/2 cup mushrooms (sliced)

    1/2 cup Black Forest Ham
    1/2 cup flour
    1/2 cup breadcrumbs
    2 eggs
    1/4 cup milk
    1/4 cup oil

    Recipe



    Mix eggs and milk in bowl.

    Dredge chicken in flour, then in egg and milk wash, then dredge in breadcrumbs.

    Brown chicken on one side in hot oil over high heat. Turn over and add onions and ham.

    After a couple of minutes, remove chicken and add mushrooms. Cook two minutes. Drain excess oil, add gravy (see below). Reduce a minute or two and serve on top of chicken.

    Serve with potatoes and cabbage.

    serves two.

    Ingredients for Gravy:

    1 tsp brown sugar
    1/2 teaspoon red wine vinegar
    Salt, pepper to taste

    1 packet brown gravy mix
    Directions for Gravy:
    Make gravy according to packet instructions, add additional ingredients and reduce over med-low heat. Add to pan when called for.
