    4-6 chicken thighs or whole chicken
    4 tablespoons olive oil
    1/4 tsp. onion powder
    1/4 tsp. Garlic powder
    salt &pepper to taste
    1 sprig fresh thyme
    1 cup coconut milk {fresh or canned}
    about 1 cup Red Stripe beer
    I medium onion
    1 large green peppers
    4-5 pimento allspice berries
    1 small minced Scotch bonnet pepper

    Rinse chicken pat dry season with salt, seasoned pepper, garlic and onion powder. Heat oil in a Dutch oven over medium heat. Add chicken brown on all sides. Remove chicken and pour of all oil except 2 tablespoons. Return chicken to pan, then add coconut milk beer. Cover and simmer about 30 minutes or until almost tender. Add onion and bell pepper, thyme, Scotch bonnet pepper and pimento berries to chicken. Season to taste with salt and pepper. Simmer about 25 minutes more, until liquid has been reduced to a gravy. If the liquid dries out before the chicken is done, add more beer.

    Make 6 servings.

    Serve with any type of rice.
