List of Ingredients
1 cup long grain rice
2-1/2 cups water
1 chicken bouillon cube OR 1 tsp. chicken flavored soup mix
1 4-oz can of sliced mushrooms, with liquid
1 teaspoon curry powder
1 tablespoon freshly chopped parsley
"good dash" grated nutmeg
1 Empire Kosher chicken, 3 to 3-1/2 lb., cut into 1/8ths
pepper, paprika, garlic and onion powder
Optional: half a cup of pecans or pignoli (pine nuts) Recipe
Cook the rice in boiling water to which you have added a bouillon cube or the chicken flavor soup mix. After water comes to a boil, reduce to simmer. Cover tightly. Or follow the recommended procedure for your particular brand. Cook until dry, about 30 to 45 minutes. When done, add the mushroom with their liquid, the curry, parsley and nutmeg. Mix well. Spread in a casserole dish that has been sprayed with cooking spray (so you wife does not get angry). Place pieces of one cut-up chicken that have been peppered, papriked, garlic powdered and onion powdered (again to taste) on top of the rice. Bake at 350 degrees for one to one and a half hours. "I got this recipe from my mother. The following variations are mine, and heartily recommended: Use a long grain and wild rice mixture, or a flavored rice mixture. Use straw mushrooms instead of regular mushrooms. Add a half cup of pecans or pignoli (pine nuts) to the rice mixture. This recipe is easily doubled, tripled or whatever. Warning: The nice mixture is like nothing you've ever had before; you may want to start with a recipe and a half!
