    John Keyes' Foolproof Roast Turkey

    # 1 x 12lb fresh (not frozen) turkey
    # 2 Tbsp (30mL) olive oil
    # 2 cups (480g) bread morsels
    # 1 medium onion
    # 1 apple (cubed)
    # 1/2 cup (120g) "Craisins"
    # 2 Tbsp (30g) poultry seasoning
    # Seasoned salt (to taste)

    Preheat oven to 450F. Sauté onions in 1/2 Tbsp (7.5mL) olive oil.

    Add onions to bread crumbs, mix in cran-raisins, cubed apple pieces and poultry seasoning.

    Wash turkey and pat dry. Fill cavity with stuffing. Rub outside of turkey with remaining olive oil. Sprinkle seasoned salt and favourite herbs to taste (i.e.: rosemary, more poultry seasoning, etc.) so that the skin of the turkey is thoroughly coated.

    Cook at 450F, uncovered, for 15 minutes. Tent with tin foil and reduce heat to 375F for 15 minutes per pound -- roughly three hours. Remove tin foil. Baste with juices.

    Decrease temperature to 325F for 15 minutes more. Remove from oven. Let rest for 15 minutes while you make gravy. Carve and serve.

    (serves six, with leftovers)
