    # 4 boneless, skinless chicken breasts
    # 1 egg white
    # 25g / 1oz / 2 tbsp sesame seeds
    # 2 tbsp vegetable oil
    # 1 onion, sliced
    # 1 tbsp demerara sugar
    # Finely grated zest and juice of one lemon
    # 3 tbsp lemon curd
    # 200g / 7oz can water chestnuts, drained
    # Lemon zest, to garnish

    Recipe



    1. Place the chicken breasts between 2 pieces of cling film and pound with a rolling pin to flatten
    2. Slice the chicken into thin strips
    3. Whisk the egg white until light and foamy.
    4. Dip the chicken strips into the egg white then coat in sesame seeds.
    5. Heat the oil in a wok an stir-fry the onion for 2 minutes until softened.
    6. Add the chicken to the wok and stir fry for 5 minutes, or until the chicken turns golden.
    7. Mix the sugar, lemon zest, lemon juice and lemon curd and add to the wok.
    8. Allow to bubble slightly
    9. Slice the water chestnuts thinly, add to the wok and cook for 2 minutes.
    10. Garnish with lemon zest and serve hot.

    Serves 4
