List of Ingredients
* 4 chicken breasts
* 1 cup all purpose flour
* 3 tablespoons olive oil, divided
* 1 red bell pepper, seeded and sliced
* 1/4 cup sliced mushrooms
* 2 tablespoons vegetables cut into julienne strips, such as carrots, onions, celery
* 1 tablespoon chopped shallots
* 1/4 cup tomato sauce
* Salt & pepper to taste
* Chopped chives for garnish (optional)Recipe
Dip chicken breasts in flour and lightly coat both sides; shake off excess. In a large skillet, heat 2 tablespoons olive oil over medium high heat. Add chicken breasts and cook for 5 to 8 minutes on each side, or until lightly brown. Keep warm. In another skillet, heat remaining tablespoon olive oil. Cook peppers, mushrooms, vegetables and shallots for 3 to 5 minutes or until slightly softened. Add the tomato sauce and cook for 3 minutes longer. Add the chicken breasts and cook for 5 to 7 minutes more or until the chicken is cooked through. Season with salt and pepper. Add garnish if desired.
Serves 4.
