    # 2 tbsp. olive oil, divided use
    # 1 lb. boneless, skinless chicken breast, cubed
    # 1 yellow onion, diced
    # 1 red bell pepper, diced
    # 1 small zucchini, cut in half lengthwise, then sliced
    # 1 clove garlic, chopped
    # 1 tsp. dried dill, or 3 tsp. freshly snipped dill
    # 2 tsp. freshly squeezed lemon juice
    # Salt and freshly ground black pepper to taste

    Heat 1 tablespoon of the olive oil in a large, deep skillet over medium-high heat until hot. Add chicken; cook 4 to 6 minutes or until lightly browned, stirring frequently. Remove chicken, place on plate. Heat remaining tablespoon olive oil in same skillet over medium-high heat until hot. Add onion, red bell pepper, zucchini; cook 4 to 6 minutes, or until onion just begins to carmelize. Stir in garlic, chicken, and remaining ingredients. Cook and stir 2 minutes or until heated through and aromatic. Garnish with fresh dill and lemon slices, if desired. Serve with brown rice and steamed carrots for a healthy and delicious meal in minutes.

    Yield: 4 servings
