    Prospect Hotel Baked Chicken Dijon

    Chicken: 4 boneless, skinless chicken breasts

    Marinade: 1 cube butter
    1 clove garlic, mashed
    5 teaspoons Dijon mustard

    Breading: 2 tablespoons fresh parsley, minced
    5 tablespoons shredded Parmesan cheese
    1-1/2 cups Panko bread crumbs

    Garnish: 1/2 cup Dijon mustard
    1 cup mayonnaise
    1/4 cup honey
    1/4 cup Parmesan cheese

    Start in the morning or the night before to marinate)

    Marinade: 1. Melt butter in saute pan over low heat.
    2. Add garlic and simmer for 5 minutes on low.
    3. Blend in mustard, stirring well.
    4. Remove from heat and let cool enough to touch but not solidify. Discard garlic. Whip vigorously until mixture thickens. Set aside.

    Breading: 5. Mix parsley, cheese and bread crumbs together, blending well.
    6. Dip chicken in butter mixture, coating all surfaces, then dip in breding mixture, packing crumbs onto chicken to coat well.
    7. Place chicken in single layer in shallow pan. Cover and refrigerate for at least 3 hours to set breading.
    8. Bake at 350 degrees for 12 minutes. Chicken should be lightly browned outside and moist on the inside.

    Garnish: 9. Mix Dijon, mayonnaise and honey together and serve as a topping on the side. Top each breast with Parmesan and serve.
