    Spicy Plantation Chicken

    1/4 cup butter
    1/2 cup yellow onions, finely chopped
    1 habanero or other fiery pepper to taste (remove seeds and mince)
    2 cloves garlic, crushed
    1 tablespoon Jamaican pimento -- allspice may be substituted
    1/4 cup lime juice
    1 cup coconut milk, unsweetened
    1 whole chicken, about 4 pounds
    1/4 cup fresh grated coconut

    In a large frying pan with deep sides, gently melt the butter, adding onions, pepper, garlic and allspice. Cook over low heat until the onions are clear. Remove from heat and cool. Add lime juice and coconut milk. Heat oven to 350 degrees; slowly bake chicken for 45 to 60 minutes in marinade; baste while cooking. To check for doneness, chicken should easily separate from the bone. Serve with white rice. Garnish with shredded coconut, and lightly sprinkle with nutmeg. Serves 4.
