Chicken, disjointed.....7 pounds
Salt, Pepper.....to taste
Oil.....4 ounces
Spanish onions, diced.....1 pound
Garlic cloves, minced.....2 cloves
Flour.....2 ounces
Dry white wine.....8 ounces
Chicken broth.....16 ounces
Bay leaves.....2 leavesThyme.....1 teaspoon
Heavy cream.....8 ounces
Carrots, diced and blanched.....1 pound
Leeks, diced and blanched.....1 pound
Water, salted and boiling.....as neededRecipe
Season the chicken w/ salt and pepper,
Saute chicken in oil for 1 minute without browning
Scatter onions and garlic over chicken, Cook chicken, Turning often for 5 minutes
Sprinkle flour over chicken, Turning to coat evenly, Cook for 5 minutes
Deglaze pan with wine, Add broth, bay leaves, and thyme, Cover and braise for 30 minutes
To finish, add cream and vegetables to chicken, Simmer for 2 minutes and serve over rice
