    8 Chicken breasts, seasoned
    8 Slices of Swiss cheese
    1 Can (8 oz.) sliced mushrooms, well drained
    2 Cans cream of chicken, mushroom or celery soup
    2 T. lemon juice
    2 C. Pepperidge Farm Stuffing Mix
    1 Can sliced water chestnuts, drained
    1/4 C. butter, melted
    3-4 T. chicken broth or water

    Butter or spray a large 9 X 15 inch shallow baking dish. Wash the chicken breasts in cold water, dry well on paper toweling, then lay out and season each with salt, fresh ground pepper, sweet Hungarian paprika and fresh or ground garlic. Arrange the breasts in the prepared dish. Place a slice on cheese over each (double over if necessary). Arrange the mushroom slices over the cheese slices. Combine the soup and lemon juice, then spoon over all. Cover the dish with a sheet of foil. Place in a preheated 350º oven and bake for 45 minutes. During the baking period, place the stuffing mix in a medium-size bowl, adding the chestnut slices, butter and broth/water. Stir to mix well. Remove the chicken from the oven, remove and discard the foil, then arrange the stuffing mixture over all in the dish. Return to the oven and continue to bake, uncovered, for an additional 15 minutes. Makes 8 servings and I’ll always serve just like turkey, with whole cranberry sauce and side dishes.

    Great for that easy Sunday dinner.
