    2 Tbsp. Canola Oil
    2 each Chicken Breast Meat, Skinless/Boneless - split lengthwise and sliced 1/4" thick slices on a slight bias
    2 each Mango, Fresh – skinned, pitted and cut into 3/4"-1” cubes
    1 Tbsp. Thai Basil – coarsely chopped
    1 1/2 cups Mango Sauce (recipe follows)

    MANGO SAUCE INGREDIENTS:

    1/4 cup Chicken or Vegetable Broth (purchased)
    1/4 cup Spicy Lingham’s Sauce (purchase Asian grocery store)
    1 cup Thai Sweet Chili Sauce Mae Ploy) (purchase Asian grocery store)
    2 Tbsp. Soy Sauce
    1 1/2 tsp. Lemon Grass, Fresh – finely minced
    1 Tbsp. Lime Juice, Fresh

    YIELD: 1 1/2 CUPS

    MANGO SAUCE PROCEDURES:

    1. Combine and blend together all the sauce ingredients.

    TO PREPARE:

    1. Heat wok/sauté pan and add oil. Add and stir fry chicken meat until cooked. Add mango pieces, toss to incorporate and warm the mango.

    2. Add sauce and basil, toss and reduce until sauce lightly coats the chicken and mango. Plate on a heated serving dish. Serve with steamed jasmine rice.
