    The Raptors Favourite Barbecued Chicken

    List of Ingredients




    * 4 chicken, quarters, legs, or, breasts
    * 1/4 cup lemon, juice
    * 1/4 cup Worcestershire sauce
    * 4 large red bell pepper, seeded, and, chopped
    * 1 cup red wine vinegar
    * 1 cup brown sugar
    * 1/4 cup Dijon or yellow mustard
    * 1 tbsp tabasco or other hot sauce
    * 4 tbsp chili powder
    * 1 tbsp ground cumin
    * 4 minced garlic
    * 1/4 cup olive oil

    # Mix the lemon juice and Worcestershire together and marinate the chicken in it for at least an hour and overnight if possible.

    # Meanwhile, place the remaining ingredients in a saucepan and bring to a simmer over a medium heat. Continue cooking, stirring frequently, until the peppers are very soft and the mixture has reduced a bit in volume, about half an hour. Puree until smooth in a high-speed blender, you may use a food processor if a blender is unavailable.

    # Place the marinated chicken breasts on an outdoor grill over a medium heat. Remember chicken cooks faster than beef and will burn quickly over a higher heat. Season with salt. Grill until almost done than begin brushing the sauce on the meat in the last few minutes of cooking. Alternatively you can roast the chicken in an oven. Brush the sauce all over the meat, coating it well then arrange it skin side up in a roasting pan placed in a 350-degree oven. Season with salt. Roast twenty minutes or so until done.
