Apple Lamb and Rice Bombay

List of Ingredients
2 teaspoons oil
1 clove garlic, crushed
1 onion, chopped
1 tomato, chopped
1/4 cup apple juice
2 tablespoons curry powder
2 cups chopped cooked lamb
Optional: 1 cooked potato, chopped
1 apple, choppedv 1 tablespoon raisins
2 cups cooked long grain white riceRecipe
Heat oil in large saucepan; add garlic and onion. Cook until onion is soft (or microwave on high power for about 3 minutes according to manufacturer's directions). Stir in tomato, juice and curry; cook, covered, for 3 minutes (or microwave on high for about 2 minutes). Add lamb, potato if desired, apple and raisins; simmer for about 5 minutes (or microwave on high for about 4 minutes), just until apple is tender. Serve with hot rice.
