    List of Ingredients




    1 tbsp vegetable oil 15 mL
    1/2 cup raisins 125 mL
    4 green onions, sliced 4
    1 stalk celery, thinly sliced 1
    1 chopped red pepper 1
    1 cup finely chopped cooked ham 250 mL
    3 cups cooked long grain rice 750 mL
    4 eggs, lightly beaten 4
    1 tbsp soy sauce 15 mL
    Toasted sliced almonds, optional
    4 cups cooked oriental vegetables 1 L

    Recipe



    In a large skillet, heat oil over medium heat. Sauté raisins, green onions, celery, red pepper and ham until vegetables are tender-crisp. Stir in rice. Make well in centre of rice mixture; add eggs and soy sauce. Cook, gradually stirring eggs into rice, until eggs are just set. Garnish with toasted sliced almonds, if desired. Serve with oriental vegetables.



    Tip

    Cooked rice will keep up to 1 week in a tightly covered container in the refrigerator and up to 3 months in the freezer.





    Suggestion for Complete Meal

    Serve with a whole wheat roll, an apple and yogurt.
