    List of Ingredients




    1 Aborio Rice
    1 Mozzarella, grated
    1 Parmesan, grated
    2 Stock, chicken or veal
    1/2 Ground Meat, beef, veal, pork or chicken
    1 Tomato Sauce
    to taste ~ Red Pepper Flakes
    as needed ~ Flour
    as needed ~ Eggs, beaten
    as needed ~ Fresh Bread Crumbs
    as needed ~ Tomato or Mornay Sauce

    **Procedure for Preparation**
    1. In heavy bottom pot, cook rice by stirring over moderate heat adding stock gradually, until the rice is creamy but not starchy.
    2. Add both cheeses and season with salt and pepper. Pour rice into shallow pan and chill until firm.
    3. Brown meat and add tomato sauce. Reduce to a thick consistency. Season with pepper flakes and salt.

    **Assembly**
    4. Using a #60 scoop, make rice balls. Hollow the ball with your finger and fill with one teaspoon of meat mixture. Seal up ball. Bread balls in flour, egg wash and bread crumbs.
    5. Fry orangini at 350° until golden brown. Serve with tomato or Mornay sauce. Garnish with parsley.
