    List of Ingredients




    1/4 cup cornstarch
    1/4 cup water
    1 cup olive oil
    1/3 cup red wine vinegar
    1/2 cup sugar
    3/4 cup red onion, finely diced
    1/4 cup roasted red peppers, finely diced
    1/2 cup bacon, cooked crisp and finely crumbled

    Mix together the cornstarch and water until it forms a paste -- a slurry, which
    is used to thicken sauces without lumps. Set aside.

    Combine olive oil, vinegar, sugar, red onion, roasted peppers and cooked bacon
    in a saucepan, and bring to a boil over high heat. Reduce to simmer, add
    cornstarch slurry a tablespoon at a time, stirring, and cook 5 minutes, until
    the dressing thickens to your taste. Cool before serving with salads.

    Makes about 1 1/3 cups, enough for 6 spinach salads.
