    Caesar Salad in a Martini Glass

    1 head Romaine lettuce, cleaned and thinly sliced

    2 ounces pine nuts, toasted

    4 ounces apple-smoked cheddar cheese, shredded

    2 ounces dried cranberries

    Honey Mustard Vinaigrette:

    4 tablespoons whole grain mustard

    5 tablespoons honey

    3 tablespoons white balsamic vinegar

    8 tablespoons extra virgin olive oil

    Pinch salt

    Pinch pepper

    1 teaspoon thyme

    Sugar to taste

    Nutmeg Twists:

    1 egg

    2 tablespoons water

    1 sheet puff pastry

    1/4 teaspoon nutmeg

    1/3 cup parsley, chopped

    1 teaspoon cinnamon

    Recipe



    Mix lettuce, nuts, cheese and cranberries together. Set aside.

    Make dressing: Mix mustard, honey and vinegar in a bowl. Slowly whisk in oil 2 tablespoons at a time. Add remaining ingredients and season with salt and pepper to taste.

    Yield: 1 1/4 cups.

    Toss together lettuce and fruit mixture with dressing and, if desired, roasted turkey meat.

    To make Nutmeg Twists: Whisk egg with 2 tablespoons of water to make an egg wash; using a pastry brush, brush the puff pastry with egg wash.

    Sprinkle remaining ingredients on top and lightly press in with hands.

    Cut pastry with knife lengthwise into 17 even strips. Holding each end of a strip, twist pastry.

    Bake at 400 degrees for 15 minutes or until golden brown.

    Cut each piece into two pieces to fit the martini glass.

    Makes 34 twists.

    To assemble: Spoon into 8 martini glasses and garnish with a Nutmeg Twist. Makes 8 servings.
