    w/ Champagne Vinaigrette

    List of Ingredients




    1/3 cup Champagne
    1 tsp. red onion fine diced
    1/4 tsp. tarragon (dry)
    2 tsp. dijon mustard
    1 1/2 tsp. granulated sugar
    2 tsp. parsley (fine chopped)
    1/4 cup vinegar
    3/4 cup olive oil
    1 cup bread crumbs
    1 cup coconut flakes
    1/2 cup egg wash 1 chicken breast (5 oz, pounded)
    8 oz. salad mix
    12 mandarin oranges
    1/4 cup roasted coconut
    1/4 roasted almonds
    2-3 oz. champagne vinaigrette

    Recipe



    In bowl, dredge chicken breast with flour.
    Mix bread crumbs and non roasted coconut in same bowl
    Take dredged chicken breast and dip into egg wash, then coat with coconut mixture
    In saute pan add 2 oz olive oil cooking under medium heat until golden on both sides.
    While chicken breast is cooking in another bowl mix champagne, red onion, tarragon, mustard, sugar, parsley and vinegar. Mix thoroughly.
    Slowly add olive oil and stir until incorporated
    Build salad: toss all ingredients into mixing bowl, then place into serving bowl. Top with chicken breast (cut into strips) and fanned out over the top of salad
