    Creamy Tropical Pineapple Coleslaw

    List of Ingredients




    6 cups shredded cabbage
    1 carrot, grated
    1 cup toasted coconut
    3/4 cup drained pineapple
    1/2 tsp of salt

    For dressing:

    1 cup coconut cream or yogurt (for the health conscious)
    1/2 cup pineapple juice

    Recipe



    1. Combine shredded cabbage, carrots, pineapple, coconut and salt
    2. Mix the coconut cream and pineapple juice
    3. Stir dressing into vegetables and refrigerate until serving time
