    These proportions make a lot of salad. One head of bok choy yields a lot, and the other ingredients balance that out. This is a good party dish. And it should keep well in the refrigerator for several days, ready for lunches and snacks.


    List of Ingredients




    Dressing:

    ¾ cup sweet chili sauce (available in most groceries' ethnic food section)
    ¼ cup soy sauce
    ¼ cup rice wine vinegar
    ¼ cup rice wine
    ½ cup sesame oil

    Slaw:

    1 head bok choy, about 8 cups chopped
    1 large daikon (Japanese radish), peeled and cut into julienne, about 2 cups
    1 jicama, peeled and cut into julienne, about 2 cups
    1 red bell pepper, cut into julienne, about 1 cup
    1 yellow bell pepper, cut into julienne, about 1 cup
    1 cup snow peas, cut into julienne
    1 cup carrots, cut into matchsticks
    ½ cup sesame seeds


    Recipe



    Mix sweet chili sauce, soy sauce, rice wine vinegar and rice wine in a bowl. Whisk in sesame oil. Combine all prepared vegetables, drizzle with dressing, lightly toss and sprinkle with sesame seeds.

    Serves 12.
