    Grapefruit Potato Salad

    2 large firm grapefruits 2
    30 ml light mayonnaise 2 tbsp
    15 ml sour cream 1 tbsp
    10 ml lemon juice 2 tsp
    5 ml frozen orange juice concentrate, thawed 1 tsp
    .5 ml paprika 1/8 tsp
    250 ml cooked potatoes, diced 1 cup
    125 ml unpeeled cucumbers, diced 1/2 cup

    Recipe



    With sharp knife, slice top off grapefruit. Remove grapefruit sections, keeping them intact; drain sections and set aside. Cut design in edge of grapefruit shell if desired.
    In medium bowl, stir mayonnaise, sour cream, lemon juice, orange juice concentrate and paprika. Add reserved grapefruit sections, potatoes and cucumbers. Toss gently to evenly coat. Cover and chill several hours. To serve, spoon into grapefruit shells.

    Serves 2
