    Killer Citrus and Berry Salad

    1 head Romaine lettuce, washed and torn
    2 oranges
    2 grapefruits
    1 basket of strawberries, sliced(I use frozen unsweetened berries)
    1 cucumber, thinly sliced
    Several slices of red onion, thinly sliced
    2 cups carmelized walnuts
    1/2 lb crumbled feta cheese
    Raspberry Vinaigrette

    Carmelized Walnuts
    2 T butter
    2 c walnuts
    2/3 c brown sugar
    1/4 c honey
    1/2 c brandy

    Raspberry Vinaigrette
    1/4 yellow onion
    3 cloves garlic
    1/2 c raspberries (I use frozen berries)
    2/3 c sugar
    Juice of one lemon
    1 c raspberry vinegar
    1/2 c salad oil
    1 1/2 c olive oil
    1 t salt
    1 t seasoned salt

    Recipe



    Wash and tear romaine and add to salad bowl. Peel oranges and grapefruits with a sharp knife to remove all of the white skin. Cut into segments and add that to the lettuce along with strawberries, cucumber and onion and crumbled cheese.

    Make carmelized nuts by heating butter in a skillet. Add brown sugar, honey and walnuts. Cook on low heat, stirring constantly for 20 minutes. Turn heat to high, quickly add the brandy and flame until alcohol burns out. Remove nuts from pan and let cool on buttered cookie sheet.

    Add all ingredients for the vinaigrette into food processor, except salad oil and olive oil. Process until finely minced and juicy. Turn processor on and slowly add oils. This makes a lot of dressing--you'll have enough for 10 more lettuce bowls!

    Add nuts to salad ingredients and toss with raspberry vinaigrette.

    This salad makes an excellent lunch or summer supper! I serve it with sliced french bagette that's nice and crunchy and a great glass of wine!
