List of Ingredients
1 sweet pink grapefruit
225g (8 oz) cooked chicken, torn into bite size pieces
1 x 80g pack of watercress
100g (4 oz) fresh cherries
100g (4 oz) Californian pistachios shelled and toasted
For dressing
50g (2 oz) cherry tomatoes, washed
5ml (1 tsp) balsamic vinegar
Sea salt
Recipe
1. Take a slice from the top and base of the grapefruit and cut away the peel and pith. Slice the grapefruit.
2. Remove the stalk from most of the cherries, leaving some still on their stalks.
3. Place the grapefruit, chicken, watercress and cherries in a bowl and toss gently. Sprinkle with the Californian pistachios for that extra bite.
4. Place the tomatoes and balsamic vinegar in a liquidizer and whizz into a frothy puree.
5. Drizzle the dressing over the salad and sprinkle with sea salt. Serve with a chilled glass of Californian Chardonnay.
