    SOUTHWESTERN CHICKEN SALAD

    List of Ingredients




    3 pieces of leaf lettuce
    10 oz. mixed greens
    Pinch all purpose seasoning
    1/4 cup sliced ripe olive
    1/2 cup tri-color tortilla strips
    1/2 cup diced tomatoes
    1/4 cup scallion
    5 oz. marinated chicken
    1/4 cup fancy shredded cheddar/jack cheese
    3 oz. ranch dressing
    3 slices avocado
    2 tbsp. chopped cilantro

    Recipe



    Put leaf lettuce into middle of salad bowl extending out over half the rim. Place chicken in microwave for 45 seconds.

    Place lettuce mix, ranch dressing and seasoning in stainless bowl, toss and pile high in the middle of the salad bowl.

    Top salad with olives, tortilla strips, tomatoes, avocado, and scallions. Place hot chicken portions on rim of plate.

    GARNISH: Sprinkle chopped cilantro over top of salad.

    Servings: 1-2
