Albuquerque Smokehouse Turkey Sandwich

List of Ingredients
2 Medium red sweet onions sliced into eight, 1/4-inch thick rounds
6 Ounces smoky barbecue sauce commercial
3 Tablespoons brown sugar
2 Medium red peppers
2 Pounds SMOKED TURKEY BREAST sliced
8 onion buns sliced and grilled
Recipe
Brush both sides of onion slices with barbecue sauce. Sprinkle each with brown sugar. Place in a skillet, over medium heat, cover and cook until caramelized and soft.
Blacken red peppers over flame. Remove skins and seeds and cut into ½ X 2 inch strips.
Layer turkey breast slices on onion buns. Top with onion slices and red pepper slices.
Heat remaining barbecue sauce in skillet and spoon over sandwich. Serve immediately.
Makes 8 sandwiches.
