    ( a chicken, vegetable and brown rice wrap)

    List of Ingredients




    1 Tbsp. each; reduced-sodium soy sauce and ketchup
    2 tsp. each; honey and lime juice
    1 1/2 tsp. grated gingerroot
    1 tsp. each; sesame oil and cornstarch
    1/4 tsp. ground coriander
    4 7" flour tortillas
    1 tsp. olive oil
    2 boneless, skinless chicken breast halves, cut into thin strips
    1 cup each; bean sprouts, halved snow peas and sliced red bell pepper
    1 cup hot, cooked brown rice
    1/2 cup grated carrots

    Recipe



    In a small bowl, combine soy sauce, ketchup, honey, lime juice, gingerroot, sesame oil, cornstarch and coriander. Set aside.
    Wrap tortillas in a damp kitchen towel and place in a 250 oven for 10 minutes to warm.
    Meanwhile, heat olive oil in a large, non-stick wok or skillet over medium-high heat. Add chicken. Cook and stir chicken until no longer pink. Continue to cook until chicken is lightly browned. Add bean sprouts, snow peas and red pepper. Cook for 2 more minutes. Add sauce. Cook until sauce is bubbly and has thickened. Remove from heat.
    To assemble wraps, place a warm tortilla on a serving plate. Spoon 1/4 rice in center, followed by 1/4 grated carrots. Spoon 1/4 hot chicken-vegetable mixture over top. Fold bottom of tortilla up to cover part of filling, then fold in sides. Serve immediately.
    Makes 4 wraps
